The majority of the hardware you use right now on your x86 box can transfer directly to your FrankenMac. In lots of cases it's just simply a matter of plugging in, in others you'll have to do some research and conduct software or even hardware modifications to make things work.
Hard drives are pretty much a drop in. All G4's ship with IDE support, giving you a wide range of capacities and performance to shop from. SCSI fans are not left out of the picture either. Like most PCs, G4's don't ship with onboard SCSI, but have a variety of aftermarket options. If you are hoping to boot off the SCSI drive, you'll need a card with Mac firmware available. Otherwise, most Adaptec cards should drop in and be detected by OS X or an open source alternative.
There are also IDE RAID controllers, and similar SCSI RAID offerings around as well. If you want to be a bit more out there, G4's will aslo boot from FireWire connected drives. FireWire 400 isn't the fastest thing in the world, but it is up to the task of connecting a 7200rpm drive with little performance drop. If you want to be REALLY exotic, try setting up a software RAID across a drive on each media option. Including a USB 1.1 device will slow it to a crawl, but it'd be different...
Just as you can stuff just about any hard drive into these boxes, you can throw most any CD-ROM at them as well. I've heard rumblings that only certain models are 'bootable' on Apples, but I have yet to run into an IDE CDROM that wouldn't boot my Umax C600 or my 'Digital Audio'. Best bet, try before you buy to be absolutely certain.
Video cards bearing a 'Made for Apple' sticker tend to be pricey compared to the same card targeted to x86 PC users. Fortunatly, you can cheap out and use some PC video cards by flashing them with firmware from a Mac equivilent. Orriginal, NVidia refrence design styled AGP GeForce 2 MX's seem to have the best chances of success at this hack. Accelerate you Mac is the best source of info on the subject.
